INGREDIENTS:
8 oz fresh fish cut into pieces 1" x ½" x ½" (roughly, pinkie finger sized pieces)
3 limes, juice only
1 tsp Hawaiian salt
¼ tsp black pepper
½ C sliced carrot, matchstick size
¼ C sliced onion, cut on the diagonal
1 C chopped tomato, cut the same size as onion
1 C sliced cucumber, cut the same size as onion and tomato, no seeds
2 C coconut cream; if not fresh, use frozen Hawaiian Sun in package
DIRECTIONS:
Salt and pepper the cut fish in lime juice for one hour.
Strain all juice and discard.
Add sliced vegetables and coconut cream.
Mix and serve slightly chilled.
NOTE: any fish is ‘ono, but ‘ahi, mahimahi and opah work especially well.
