Chicken Long Rice
Kamehameha Schools Children's Chorus Cookbook 1997-1998.
2 lbs. boneless chicken thighs
2 bundles long rice
4 c. water
1 tsp. Hawaiian salt
3 stalks green onion (chopped)
2 tsp. sugar
Tad of ginger
Soak long rice until soft, cut to desired length, and set aside.
Slice chicken and add to boiling water.
Put in sugar and Hawaiian salt.
Cook until chicken is tender.
Add long rice and cook until tender.
Add green onions and tad of ginger.
