Pakala Fernandes, ‘Ohana Recipes (as shared by Hailama Farden)
INGREDIENTS:
1 cup vegetable oil
2 cups sugar
4 eggs, beaten
2 ½ cups flour
4 tsp baking soda
1 tsp salt
10 large, over-ripe bananas, mashed
1 cup chopped nuts
1 cup raisins soaked in liquor
DIRECTIONS:
Beat oil and sugar with an electric mixer.
Beat eggs separately until fluffy.
Add beaten eggs to sugar and oil mixture.
Combine remaining dry ingredients and blend into the egg mixture.
Add bananas and nuts.
Pour into loaf pans.
Bake at 350°F for 1 hour.
NOTE: If making cupcakes, bake for 8–10 minutes.
